Spears have a striking deep burgundy coloration. This variety has a 20% higher sugar content giving the raw stalks a sweet taste. When cooked, the stalks turn to green and have a mild, nutty flavor. Vascular bundles have less lignin per spear making them less stringy than traditional varieties. Also typically larger and much more tender.
